Recipe: Sloppy Joes by Amanda Long
My family loves dinners like this. Fast and you can grab it on the go if you need. Serve with a veggie and you have a complete meal fast. This night we served buttered peas and green beans (we have picky eaters that will only eat green beans from the can and I’m happy to accommodate the veggie needs of my picky eaters)!
Wrap it up in a napkin and send them on their way to practice or have it ready to serve when they arrive home hungry and tired. A comforting sloppy Joe in hand will make your little sports star full and happy!
The process is so simple. A pressure cooker cuts down a bit on the simmer time and really the best part is that you don’t have to stir and control the heat, you just toss it in and set it for eight minutes and walk away. Unlike on the stove where you have to monitor the heat, splattering and making sure it’s stirred on occasion. This is an upside in most pressure cooking recipes. It’s why I love it and why so many people say they now cook at home every night, and they have renewed their love of cooking with their Instant Pots or other electric pressure cookers.
I’m not kidding you, the pressure cooking (stove-top or electric) is making a comeback! I’m here to help it. It’s my go-to pressure cooker. If you want set and forget, the electric pressure cookers are for you. If you’re more about the technicality of pressure cooking and want true pressure cooking experience, the stove-top version is for you.
If you don’t own a pressure cooker, you can cook this recipe on the stove. You’ll just brown the beef in a pan and then simmer in the sauce stirring occasionally for 20-30 minutes.
2 pounds ground beef
1 cup ketchup
14-ounce can stewed tomatoes
1/2 cup chopped peppers and onions (I use Trader Joe’s frozen roasted peppers and onions mix)
2 teaspoon granulated garlic
1 teaspoon onion powder
1 tablespoon Worcestershire
2 tablespoons brown sugar
2 tablespoons chili powder
1 teaspoon dried mustard (or yellow mustard)
Squirt hot sauce
On sauté (the highest setting on the Instant Pot), brown the ground beef.
Stir the rest of the ingredients together in a bowl. Pour over the beef and stir well.
Close the lid and set the valve to sealing. Set the pressure to high and time for eight minutes.
If you don’t own a pressure cooker, you can cook this recipe on the stove. You’ll just brown the beef in a pan and then simmer in the sauce stirring occasionally for 20 minutes.
Serve on your favorite rolls. In the photo I used dinner rolls to make sloppy Joe sliders.
Note: You can freeze any leftovers for later use. The sloppy Joe mix thaws and freezes really well. It’s easy to heat up and put in lunches, too.
