Dear reader, I’m embarrassed to admit it but I have never cooked with truffles. I recently received some truffle-flavored oil but it hadn’t piqued my interest enough to purchase truffles. The cost of truffles is astonishing costing $40 for two ounces of black truffles and $575 for one ounce of white.

Truffles are a fungus or mushroom of the genus Tuber. They grow underground beneath the roots of oak, beech, birch, and pine trees. This symbiotic relationship provides phosphorus, nitrogen, and water to the tree in return, for carbon and sugars. They require specific soil, climate, and tree types to thrive.

The reason truffles are so expensive is they are very rare and very few environments support growth. They are also incredibly hard to find. In many parts of the world, pigs sniff them out unfortunately pigs are also prone to eating them. Enter the dog who has a super sniffer and is not a big fan of truffles.

The Lagotto Romagnolo, the star of truffle hunting, is a special breed of dog prized for their ability to find truffles. Tuffy is a truffle dog and her highly developed sense of smell is the key to her skill. During truffle season, December to May, she wanders in the forests of Oregon and Washington sniffing around the roots of trees.

Her companion will not disclose the exact area they cover but I was told that she makes enough money selling the truffles Tuffy finds that she doesn’t have another job. In fact, her job is walking through beautiful forests with her BFF. Who could ask for anything more?

We have one adorable Dalmatian/mix puppy who is seven months old.
