Recipe: Chocolate cherry truffles by Raw Chef Debra Garner

These truffles are decadent, yet good for you. I use raw cacao powder which is considered a superfood. It has 40 times the antioxidants of blueberries, it's the highest plant-based source of iron, full of magnesium, has more calcium than cow's milk, a natural mood elevator and anti-depressant.
The recipe also includes chia seeds, which are a good source of omega-3 fatty acids, loaded with fiber, antioxidants, iron and calcium. Chia seeds also contain 5.6 grams of protein per one-ounce serving.
To make these truffles you will need a good food processor.
Chocolate Cherry Truffles
1 cup walnuts

18 Medjool dates
1/2 cup dried dark cherries
1/2 cup raw cacao powder
1/4 cup chia seeds
1/4 teaspoon pink sea salt
Chopped pistachios, green or blue matcha powder, cacao powder to roll truffles in
Put the walnuts into food processor and process into finely chopped pieces. Add pitted dates, cherries, cacao powder, chia seeds and pink sea salt. Process until all ingredients are incorporated and a smooth dough is formed.
Using a small cookie dough scoop, scoop out the dough and roll into balls. When all are done, you can roll into the toppings of your choice. Store in the refrigerator or freezer.
