Get FIt: Recipe of the Week
1 tbsp. canola oil
1 red onion, chopped into small bits
1 tbsp. green curry paste
1 can light coconut milk
1/2 lb. green beans, trimmed and cut into 1.5-inch lengths
1 1/2 lbs. of lean protein or tofu, cut into 2-inch cubes
3 tbsp. chopped fresh cilantro for garnish
1 1/2 cups brown rice, cooked according to package directions
Heat oil over medium heat. Add onion and saute until softened (three minutes). Stir in green curry paste and coconut milk.
Reduce heat to low and simmer for five minutes. Add green beans and cook for two minutes.
Add cooked protein and simmer gently 5 minutes.
Stir in the chopped cilantro. Transfer to a warmed platter and garnish with cilantro. Serve immediately with hot rice.
