Warm up to Chicken pot pie

ell, I hate to even think about it, but I’m going to have to accept the fact that, summer is over.

I really have become a summer worshipper. It is now fall, and winter is looming. I’d better get out those comfort-food recipes.

Fortunately, one of them just popped into my brain – a jazzed-up chicken pot pie. The pie is a wonderful creation with chicken, vegetables and a yummy creamy sauce. Maybe fall doesn’t sound so bad after all.

This month, my recipe is simply called Chicken-Vegetable Pot Pie. However, true to my usual style, I’m going to put some haricot vertes in it and some wild mushrooms – my favorites – shiitake.

This is a great recipe for a cold fall or winter evening. The vegetables can be substituted with any that you or your family like, for example, broccoli or celery instead of haricot vertes. Fill the pot pie with your favorites!

Talk about comfort food … this pie is right up at the top of my list.
