A well-known name in the bakery business will be opening a new store in the Carson Mall.

Paul Schat's Bakery will open for business this summer, fulfilling the wishes of the mall operator to have a bakery to compliment the other eateries brought on board recently.

Paul Schat created a successful bakery by the same name in Mammoth Lakes, Calif. He is part of the family that created and operated Schat's Bakery in Bishop, Calif.

"We couldn't be more excited that Paul Schat's Bakery is going to open here," said Kevin Ray, local property manager for Carson Mall. "With the reputation Paul has from his shop in Mammoth, we know it will be a draw for the Carson Mall."

Schat's wife, Cheyenne, said they had been looking to open a bakery in the area since 2003, when they sold the Mammoth operation and bought a home in Minden. They took a detour to operate a bakery in Napa before ending up back here. The Schats initially planned to open a bakery inside the proposed C.O.D. Casino in Minden, which is still in the planning stages.

"We started talking to the people at the Carson Mall because they really wanted a bakery, and here we are," Cheyenne Schat said. "I'm excited about all the updates they are doing, and people are looking for a place to shop, and food is a good way to get started."

Also opening in the mall this summer will be Paradise Cove Cafe, a tropical-themed restaurant and gift shop. Owners Doug and Jamesa Cramer also have Mom & Pops Diner in downtown Carson City. The new cafe plans to serve breakfast and lunch, with dinners on weekends.

Ray said, "This helps us complete our first phase, which was to find those unique dining experiences and bring them to Carson Mall. The next phase will be to bring in some new retail establishments."

Ray said he hopes to see both Schat's and Paradise Cove open in time for the Taste of Downtown in June.
